Ingredients
  

Crust

  • cup butter
  • cup brown sugar
  • ¼ cup cocoa
  • 1 egg beaten
  • 1 ⅓ cup graham cracker crumbs
  • 1 cup pecans chopped

Caramel Cream Cheese Layer

  • 4 oz caramel use this recipe http://www.bakedwithoutabox.com/2021/07/02/caramel/
  • 4 oz cream cheese room temperature

Chocolate Custard Layer

  • ½ cup whole milk
  • ½ cup heavy whipping cream
  • 4 egg yolks
  • 1 tsp vanilla
  • 1 ½ tsp corn starch
  • 1 cup milk chocolate chips

Topping

  • 4 oz caramel warmed
  • ½ cup pecan halves

Instructions
 

Crust

  • In a saucepan over medium heat, melt the butter, sugar and cocoa together.
  • Let mixture come to a boil and whisk in the egg. Continue to cook until the egg is cooked and the mixture has thickened slightly.
  • Remove from heat and stir in the graham cracker crumbs and chopped pecans.
  • Press the mixture into the bottom of a 9 in pie pan and refrigerate.

Caramel Cream Cheese Layer

  • Whisk the softened cream cheese until it is smooth.
  • If you are making fresh caramel mix the hot caramel in with the cream cheese, whisking until smooth.
  • If you are using caramel that you made ahead of time, warm the caramel in the microwave or on the stove top until the caramel is soft and the consistency of liquid honey. Whisk the caramel into the cream cheese until smooth.
  • Spread the caramel cream cheese over the crust and return to the refrigerator.

Chocolate Custard Layer

  • Whisk together the milk, egg yolks and corn starch in a medium mixing bowl until smooth.
  • In a medium sized saucepan, heat the cream until it is simmering, but not quite boiling.
  • Temper the egg mixture by SLOWLY pouring a small but steady stream of the hot milk into the egg mixture while mixing constantly. Mix until smooth.
  • Return everything to the saucepan and cook over LOW heat, stirring constantly until the mixture thickens and loses it's "starchy" taste. This may take 10-20 minutes depending on your stove top.
  • Remove the mixture from the heat and add the vanilla and chocolate chips. Mix until the chocolate chips are completely melted and pour over the cream cheese layer. Return to the fridge until firm (about an hour)

Topping

  • Melt caramel in the microwave or on the stove top until it is liquid. Drizzle the caramel over the top of the custard layer.
  • Garnish with pecan halves
  • Refrigerate until ready to eat. Store in the fridge.
