Pincher Creek Bars
Inspired by Nanaimo Bars and invented in the wonderful town of Pincher Creek!
Ingredients
Base Layer
- ½ cup butter
- ½ cup brown sugar
- ⅓ cup cocoa
- 1 egg, beaten
- 1 tsp vanilla
- 2 cups graham cracker crumbs
- 1 ½ cups pecan, chopped
Middle Layer
- 2 8 oz packages cream cheese room temperature

Top Layer
- 1 ½ cups milk chocolate chips
- ¼ Cup + 2 Tbsp heavy whipping cream
Instructions
Base Layer
- Combine the butter, sugar and cocoa in a saucepan and bring to a simmer over medium heat. Add the beaten egg and continue to cook until the mixture slightly thickens.
- Remove from heat and mix in the vanilla, graham cracker crumbs and chopped pecans. Press into a 9x13 pan.
- Place in refrigerator.
Middle Layer
- Whisk the cream cheese in a mixing bowl until smooth.
- Melt the caramel in a saucepan over low heat until it resembles liquid honey.
- Add the melted caramel to the cream cheese and mix until smooth.
- Pour the mixture on top of the graham cracker crust layer and return to the fridge for 1/2 hour.
Top Layer
- Melt the chocolate and cream together and spread over the cream cheese layer.
- Return the pan to the fridge and continue to chill for about 8 hours before enjoying.
- Store in covered the refrigerator.
