Pincher Creek Bars

Course Squares and Desserts

Ingredients
  

Base Layer

  • ½ cup butter
  • ½ cup brown sugar
  • cup cocoa
  • 1 egg, beaten
  • 1 tsp vanilla
  • 2 cups graham cracker crumbs
  • 1 ½ cups pecan, chopped

Middle Layer

  • 2 8 oz packages cream cheese room temperature
  • 12 oz caramel I use this recipe: http://www.bakedwithoutabox.com/2021/07/02/caramel/

Top Layer

  • 1 ½ cups milk chocolate chips
  • ¼ Cup + 2 Tbsp heavy whipping cream

Instructions
 

Base Layer

  • Combine the butter, sugar and cocoa in a saucepan and bring to a simmer over medium heat. Add the beaten egg and continue to cook until the mixture slightly thickens.
  • Remove from heat and mix in the vanilla, graham cracker crumbs and chopped pecans. Press into a 9x13 pan.
  • Place in refrigerator.

Middle Layer

  • Whisk the cream cheese in a mixing bowl until smooth.
  • Melt the caramel in a saucepan over low heat until it resembles liquid honey.
  • Add the melted caramel to the cream cheese and mix until smooth.
  • Pour the mixture on top of the graham cracker crust layer and return to the fridge for 1/2 hour.

Top Layer

  • Melt the chocolate and cream together and spread over the cream cheese layer.
  • Return the pan to the fridge and continue to chill for about 8 hours before enjoying.
  • Store in covered the refrigerator.
