Cornmeal Muffins
These cornmeal muffins are a perfect side for BBQ ribs and baked beans.
Ingredients
- 1 cup butter room temperature
- 1 ¼ cup sugar
- 1 tsp salt
- 2 eggs
- 1 ½ cups corn meal
- 1 tsp baking powder
- 2 cups all purpose flour
- 1 ¼ cups buttermilk
Instructions
- Cream the butter, sugar, and salt together until light in color and fluffy in texture. Add eggs one at a time, mixing until fully incorporated.
- Mix in corn meal until smooth.
- Sift together baking powder and flour.
- Add the flour mixture and buttermilk alternatively to the muffin batter by first adding about a fort of the flour and mixing until just combined. add one-third of the liquid and mix just until blended in. Repeat this process until all ingredients are used.
- Using an easy release ice cream scoop, portion out batter into lined muffin tins. Bake at 350°F until the center of the muffin springs back when lightly touched or when an inserted toothpick comes out clean, about 15-20 minutes depending on your particular oven.
