Chocolate Waffles with White Chocolate Raspberry Whipped Cream
These waffles are perfect for a special breakfast!
Ingredients
Chocolate Waffles
- 1 ½ cup flour
- ¼ cup cocoa
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- 3 eggs separated
- ½ cup melted butter may substitute with cooking oil
- 1 ¾ cup buttermilk
White Chocolate Raspberry Whipped Cream
- 1 ¼ cup heavy cream
- ¼ cup white chocolate chips
- 3 tbsp raspberry jam
- ½ cup raspberries fresh or frozen
Instructions
Chocolate Waffles
Step 1
- Combine all dry ingredients in a mixing bowl and form a well. Place buttermilk, vanilla, and egg yolks in the well.
- Start mixing in a circular motion, beginning from the middle of the well working your way out to the sides of the bowl, slowly incorporating all of the dry ingredients into the batter. Continue to mix until the batter is smooth with no lumps.
Step 2
- Beat the egg whites on high until they form stiff peaks.
- Gently fold the beaten egg whites into the waffle batter.
Step 3
- Immediately cook the waffles following the directions for your personal waffle iron.
- To keep the waffles crisp and warm until serving, place cooked waffles on a cookie sheet in the oven set to 270°F.
White Chocolate Raspberry Whipped Cream
- Melt the white chocolate chips together with ¼ of the heavy cream and mix until smooth.
- Mix in the raspberry jam until smooth and set aside until cooled.
- Whip the cream on high until it thickens and forms soft peaks.
- Slowly pour in the white chocolate raspberry mixture while still whipping the cream, on low.
- Fold in the raspberries and serve on top of the chocolate waffles.
